What are Lambs Quarters?

You can imagine it as a wild spinach. It’s taste is a unique one among the wild plants, as it tends towards a salty flavor - a rare treat. The leaves, stems, even flowers are edible raw or cooked. Read more about the rich herbal properties of this plant here.

Wild Pesto

Ingredients:

2 cups lamb’s quarters

¼ cup olive oil

¼ cup pumpkin seeds (roasted adds extra flavor)

1-2 cloves of garlic

Pinch of salt

Splash of apple cider vinegar, or preferred acid 

Directions:

  1. Place ingredients in a food processor. Blend until desired consistency.  

Notes:

- You can freeze batches up to roughly 1 year.  

- You can always add different greens in with lamb’s quarter for subtle variety.  Nettle, cilantro, arugula, etc.  Explore and enjoy!
